If there appears to be a limited number of Ethnicities and Nationalities available within the drop down fields for your employees, navigate to - 

Administration -> Company -> Settings -> Display Settings -> General Settings. 

If you select the plus icons next to the headers, this will open the options for selection. 

You can choose to Select All, or the missing items. Then select Submit to save any changes.
